A message from Brennan “Gator” Palmiter
A common theme in many people’s lives is, “when one chapter closes another chapter begins”. My story is no different. From shifting gears as a racecar driver to joining up with my beloved corp, each chapter has been an incredible journey.
So how did we get from racing cars to being a welder, to Infantry Marine, rodeo cowboy, to now rancher? After 8 years in the rodeo community riding bulls, I began to age out, slow down, and, ultimately, stopped bouncing after getting bucked off. However, I wasn’t ready to give up the Western way of life and developed a love for the animals in the sport. Ever since I was little, I have been a cowboy… with no cattle. I discovered Longhorn cattle, an iconic animal with fancy colors and amazing horns! I mean, who doesn’t recognize a herd of longhorns from a distance?
After working for many different cattle operations, the desire to raise my herd has always been close to my heart. In 2022, the opportunity finally came with the purchase of some land in Alvord, Texas. At first, our only thought was raising longhorns and running a cow/calf operation.
Many cattlemen suggested that we don’t raise longhorns as beef cattle. Saying things like, “They aren’t fatty cattle”, “the horns are hard to work around”, and “Longhorns aren’t real beef cattle”. That is until I met some passionate people who work with longhorn cattle and produce beef.
They shared their passion about why they love longhorn beef for the health benefits of eating this type of beef. The rich history of the breed and the way God created these animals yields the best to a free-range cattle that consumes only grass.
After processing one of the longhorns and experiencing the flavor, we were blown away and had to share this amazing product. My first experience of cooking ground and having very little grease in the pan with rich flavor, I knew I was hooked.
Through this journey, I have had the pleasure to meet so many unique people and share our local, small-farm beef.
